 “Kaiseki”

 

In 2018, I travelled to Japan, having long desired to experience the culture, landscapes, and incredible food. From the futuristic, frantic nature of Tokyo, to the traditional Ryokan and the elaborate ‘Kaiseki’ - a traditional multicourse dinner, where the food itself becomes an artform. The Sushi Series is inspired by these experiences, fusing them together to reflect my time in Japan. These bite-sized technofoods, pay tribute to how the Japanese people have managed to simultaneously honour their past and embrace the future.
